Super Soft Gluten Free Hot Dog Buns (Makes 6)

How to make the best gluten and dairy free hot dog buns:

1)

10g dried yeast

150ml warm water

Mix the yeast into the warm water until dissolved. Let it stand while doing the next step

In a bowl, combine:

220g gluten free flour

40g potato or corn starch

1 tsp baking powder

1 tsp psyllium husks

1 tsp sugar

1 tsp salt

65 ml milk (rice milk if dairy free)

60g yoghurt (vegan sour cream from Zenzo for dairy free)

1 tbsp oil

3) Add the yeast mixture to the rest of the ingredients and mix with an electric mixer for 3 - 5 minutes, until combined and smooth. Depending on the gluten free flour you use, the dough can be quite wet, but that is fine

4) Tip dough onto a well floured surface. If the dough is quite wet, use extra flour to shape the dough and divide it into 6 equal pieces. Shape the pieces into long (12-15 cm) logs and put them onto a tray with baking paper. You may brush them with a little oil to give them a nice brown crust

5) Turn your oven on to 200°C and put an ovenproof dish with 250ml water at the bottom to create steam

6) When the oven is hot, put the tray with the buns and bake for 20-25 minutes until golden

7) When baked, take out of the oven and cover with a clean tea towel. Let the buns cool completely before cutting and filling them
